Ingredients

  • Prunes, 150g pitted from package

  • Chicken Breast, 4 175g breasts sections

  • Brown Onion, 1 sliced

  • Spices and Stuff
  • Butter, 30 grams

  • Chicken Stock, 250 ml

  • Honey, 3 teaspoons

  • Rosewater, 3 teaspoons (optional)

  • Ras El Hanout, 1.5 teaspoons

  • Lemon, juice

  • Rice, to serve (couscous is traditional)

Directions

  • Melt the butter in a large lidded frying pan over low heat. Stir in the Moroccan spice mix and cook for 30 seconds. Increase the heat to medium, add the chicken breast fillets, and cook for 1 minute on each side, ensuring the spices don’t burn. Remove the chicken from the pan and set aside.
  • Add the onion to the pan and cook over medium heat for 5 minutes, or until softened. Pour in the chicken stock, then stir in the prunes, honey, lemon juice, and rose water. Cover and simmer on low heat for 10 minutes.
  • Return the chicken to the pan, cover, and gently simmer for 15 minutes, or until the chicken is cooked through and tender.
