Ingredients

  • Carrots (500 grams)

  • Brown Onion, 1 grated

  • Butter (30 grams)

  • Garlic Gloves, 1 crushed

  • Turmeric, 1/2 teaspoon ground

  • Ginger, 1/2 teaspoon ground

  • Cinnamon, 1/2 teaspoon

  • Paprika, 1/2 teaspoon

  • Cumin, 1/2 teaspoon

  • Cayenne Pepper, pitch

  • Couscous, 50 grams

  • Lemon Juice, 2 teaspoon

  • Italian Parsley, chopped to garnish

Directions

  • Grate carrots. Place onion in a saucepan with butter and cook over medium heat for 3 minutes.

  • ADD 1) garlic, 2) turmeric, 3) Cinnamon, 4) paprika, 5) cayenne pepper and 6) the carrot to saucepan.

  • Bring to boil, cover and reduce to simmer for 15 minutes. Add couscous, stir until boiling, then cover and gently simmer for another 20 minutes.

  • ADD lemon juice and serve hot, topped with a little chopped Italian parsley.
